1 1/2 lbs. potatoes, diced

3 slices bacon

½ lb. green beans, cut into 1” pieces

1 med. onion, chopped (or use your fresh scallions!)

1 tbsp. flour

1 tbsp. sugar

1 tsp. salt

1/4 tsp. celery seed

Dash of pepper

1/2 c. water

1/4 c. vinegar

Heat 1/2 teaspoon salt to 1 cup water to boiling. Add potatoes. Heat to boiling. Reduce heat, cover and cook until tender, 20-25 minutes. Steam green beans until tender. Drain and cool potatoes and beans.

Fry bacon in skillet until crisp; drain on paper towels. Cook and stir onion in bacon fat until tender. Stir in flour, sugar, salt, celery seed, and pepper. Cook over low heat, stirring constantly until bubbly. Remove from heat. Stir in water and vinegar; heat to boiling. Stir constantly for 1 minute. Pour over potatoes and beans and stir together.
