Winter Slaw Recipe

There is much satisfaction gained from knowing where each component of a meal comes from, the farmer who grew it, or maybe even having grown or harvested it one’s self. Rather than buying salad greens this winter, try making a ‘local slaw’ from fall harvest vegetables. For those of you who have a Groundworks Fall Harvest Share, this is yet another great way to use your beets!

Confetti Winter Slaw

1 med. sized beet, grated raw

1 med. sized carrot, grated raw

1/2 med. sized green cabbage, grated or sliced and chopped small

Toss grated veggies together with a sweet Poppyseed dressing, or make up a dressing of your own.

Both nutritious and beautiful. Happy eating.
