This week is our first week of CSA share pickup. Actually, today was the first pick up out at the farm, and what a lovely day it was. Lucky members received spinach, kale, lettuce, baby radish and scallions. So, in honor of the cool season and the great bounty of greens in our shares, TWO recipes with some ideas on how to make use of your leaves…
Spinach Breakfast Smoothie
as much spinach as will fit into your blender- twice
1 T honey (or other sweetener)
Cram your spinach into the blender with a little water to help it blend. Then, add some more and blend in your other ingredients, or whichever fruits you prefer.
Wild Rice Chowder with Greens
1 t oil of your preference
2 oz ham OR BETTER YET, some Groundworks Farm bacon, chopped
1 onion, chopped
3 carrots, chopped
3 garlic cloves, chopped
1 c uncooked wild rice
2 c broth
4 c water
2 T all-purpose flour
4 c whole milk
2 oz Swiss cheese
2 oz Parmigiano Reggiano cheese
1/2 tsp salt
Fresh ground black pepper
3 c coarsely chopped Kale
1. Combine first 6 ingredients in a large saucepan or Dutch oven. Saute until browned, about 10 min. Add rice; saute 2 minutes.
2. Add broth and water. Simmer until rice is done, about 40 minutes.
3. Combine flour with 2 c milk; whisk well. Add to soup. Add remaining milk. Cook until soup thickens. Add cheese, salt and pepper to taste. Cook another 5 minutes. Add kale and cook a few minutes more.
