‘Green’ Apple Spinach Muffins

“Green” Apple Spinach Muffins

1 cup flour
1 c whole-wheat flour
¾ c sugar
2 tsp. baking soda
1 ½ tsp. cinnamon
1/8 tsp. cloves
¼ tsp. salt

¾ c egg, beaten
½ c oil (I used melted butter or lard)
½ c applesauce
2 tsp. vanilla
1 c grated apples
2 c finely chopped spinach

350 degrees F. Whisk dry ingredients together. Beat wet ingredients, then add to dry.
If using melted butter or lard, it’s best if the rest of the wet ingredients are close to room temp. Blend dry and wet until JUST MIXED. Bake until tops are golden.
