Week 3

Okay, sorry for the delay. The internet on the farm has been down all afternoon, but we’re back in action now. Here’s what we had for dinner tonight!

Bacon and Blue Cheese Salad with Radish

1 head lettuce, 

1 bunch radish

1/2 lb bacon, chopped and fried

shredded carrots

crumbled blue cheese or blue cheese dressing

Quinoa Cakes with a Spinach Cream sauce


1 c quinoa, washed

1 c broth 

1 bunch scallion, finely minced (or chives)

1 tsp salt

1 tsp garlic powder

1 lg egg

1 T ground coriander

1/4-1/3 c flour

oil for cooking

– Add 1 c broth and 1 c water to quinoa and cook. Cool. 

– Combine the rest of the ingredients with the quinoa and mix well.

-Grease a cookie sheet (jelly roll pan) liberally. Form quinoa mixture into patties 1/2″ thick and lay them on the greased pan. (I find this WAY easier and less messy than frying them!)

– Bake on 400 degrees F until golden brown

Cream Sauce

4 T butter

4-6 T flour

2-3 c milk

chopped spinach

chopped garlic, onion or chive



– Melt butter and add garlic (or onion), add flour and stir. Add milk slowly until completely mixed. Stir in spinach and cook until thickened. Serve over quinoa cakes.
