Week 8 – Carrot pops and spring rolls

All the credit for this recipe idea goes to Eric. When our young son asks for a popsicle, Eric replies “We can make that!” So they did.

Carrot Juice Popsicle 

You will need:

a juicer…

popsicle molds


a little honey

1 apple

Juice apple and carrots. Add sweetness as desired. Freeze until hard.

‘Kitchen Sink’ Spring Rolls: Perfect for a busy, busy life.

You will need:

Rice Paper and vegetables. No cooking required!


Dice, chop or shred the contents (part or all) of your veggie share.

We used: Radish, Swiss chard, cabbage, carrots and scallions.

To Assemble: fill a pie plate with cool water. Dip rice paper-one at a time- into the water and soak for about 20-30 seconds.

Transfer to a plate and fill with veggies. That’s it. Have dipping sauces on hand as well: peanut sauce, Hoisin sauce, or plain soy sauce/Bragg’s Liquid Amino.

Other filling options: scrambled eggs, cooked meat, really anything!


Another option would be a quick and less-mess Egg Roll. Instead of rice paper buy egg roll wrappers. Lightly pan fry the veggies and wrap. Brush with oil and bake at at med-high heat until browned.
