Harvest Gathering- Carrot Cake

For those of you who missed our harvest gathering last weekend, here’s the recipe for Carrot Cake that received rave reviews at the event:

Homegrown Carrot Cake

2/3 c oil

2/3 c Lard

1 c brown sugar

1 c Organic cane sugar

1 tsp. vanilla

3 XL eggs

2 1/4 c flour (1/2 whole wheat, 1/2 all-purpose)

2 tsp. cinnamon

2 tsp. baking soda

1 1/2 tsp. salt

3 c grated carrots

Cream the oil, lard and sugar together. Add eggs and beat well. Fold in vanilla and carrots. In a separate bowl, sift together dry ingredients. Combine wet and dry ingredients until just mixed. Bake at 400 degrees for 10 minutes, then lower to 350 and bake until a toothpick comes out of the center clean.

  1. I made this for a dinner one night. Our friend who was supposedly stuffed ate three pieces. I guess it was a hit. Thanks for sharing!
