    1. Hi Christine,
      1/4, 1/2 and whole beef orders are cut to customer preference. We will consult with you to complete a “cut sheet” prior to processing. So, the 1/2 comes with beef cuts representing what is available from the entire animal, with flexibility in terms of how different muscle groups are processed (for example sirloin tip roasts or steaks? rib steaks or New York steaks?). One expects about 50% ground beef, unless more is desired. Customer can choose whether they want organ meat, heart and liver, and stock bones included or not.
      At this point, we are taking orders that can be filled late summer of 2019. Please let us know if you have any further questions.
